This is my Mom’s recipe – it’s scaled large to feed a crowd of people. If you enjoy a classic meatloaf, you’ll love this one. Even DMc likes this, and he’s not generally a meatloaf guy.
Mom’s Meatloaf
A classic based on the Lipton "souperior" recipe
Servings: 10
Ingredients
- 3 pounds Ground beef (Mom uses chuck, I use 90/10 because I can't find ground chuck locally any more)
- 2 packets Lipton Onion Soup mix
- 2 Tsp Cavender’s Greek Seasoning
- 1-1/2 cups Panko bread crumbs (plain, flavored, whatever works for you)
- 2 Large eggs
- 1/2 cup Beef broth or water
- 1/2 cup Heinz 57 sauce
- 1/4 cup Additional Heinz 57 or ketchup (for the top)
Instructions
- Preheat oven to 350 F
- Mix all ingredients except the topping sauce well
- Shape into a loaf form in a baking pan (9x13x2 or slightly larger)
- Spread topping sauce over loaf
- Bake uncovered for 1 hour and 15 minutes (a bit longer if you went taller than about 2" when forming your loaf)
- Let rest for 10 minutes before cutting and serving
